Sustainably sourced
British fruit and botanicals
from around the world
Sipello is produced using British fruit and ingredients married to sustainably sourced botanicals from around the world. We úse wild harvested ingredients where they exist because by definition, these are natural ingredients grown in the wild that are handpicked from a native ecosystem. Meaning they retain their purist natural flavour, largely uninterferred with directly by human influence or interventions. The wild harvested ingredients we use are handpicked to ensure the sustainability of the wild areas from where they are sourced.
Organic ingredients are also a key pillar of Sipello's flavour make up as organic ingredients lend our drink the cleanest taste of the botanical ingredients we use - free of any nasties. Not all our wild harvested ingredients can be certified as organic however. Some can't achieve official certification despite being grown organically because there's no guarantee that there hasn't been any drift from nearby fields or farms. We source ingredients that are ethical and not price led with provenance, traceability and a fair price equalling a fair wage at the heart of our sourcing.

Rhubarb

The Rhubarb we use is handpicked from farms across three corners of England - Herefordshire, Yorkshire and Kent. We use different farms across the country to ensure we have a good geographical spread in case of typically English, inclement weather. Our rhubarb is Red Tractor Certified.

Gentian

Gentian is a sustainably grown protected species that is wild harvested under licence in the French Alps / Queyras National Park in the south east of France.

Cinchona

The Cinchona tree is native to the eastern slopes of the Andes. Our Cinchona, also known as the "fever tree", is wild harvested in Ecuador. The quinine that comes from Cinchona is the key ingredient in tonic water.

Red Sandalwood

Red Sandalwood is wild harvested in Gabon, a country along the Atlantic coast of Central Africa. Red Sandalwood is limited in availability due to it being slow to grow.

Organic Bergamot Oil

Our citrus note comes from the beautiful hills of Calabria in southern Italy famous for Bergamot. All the fruit is still collected by hand to this day to ensure the peel is not bruised releasing the oil too early. Once extracted the oil is filtered and then bottled, the resulting oil is known by the locals as the liquid gold of Calabria'.

Our spirit

We use grain spirit as our base, much like most British gins, because its neutral flavour allows our eccentric botanicals to showcase their flavours unhindered.

Orris Root

The foundation that allows all the others to be at their best - the root of the Iris flower. Tim's grandmother was called Iris and she played the same role in his life. Our orris root comes from Florence, Italy.

Elderflower & wormwood

Both of these stunning ingredients are wild harvested under licence from Albania. The collection areas are very remote, away even from already remote village settlements, nearest collection points are Gramsh town & Lenie village, Elbasan county.

Linden Flower

Wild harvested from central Bulgaria nearest collection point Dolno Izovoro (nr Kazanlak). The land is privately owned, and managed by a co-operative for forestry, which does its own resource assessments the company pays for collection rights & volumes are controlled in each region.
